(vegan, no refined sugar, dairy-free)
This breakfast is such a treat. It’s the kind of breakfast you want to make over the weekend when you have some extra time on hands to make yourself something special. When the oats get baked with the banana, raisins and blueberries they create this caky kind of consistency which is beyond delicious. It’s literally like having a dessert for breakfast! I love adding some sunflower seeds for extra crunch and Fresh Blackcurrant powder for extra goodness and skin loving antioxidants. This baked oatmeal is best to be served straight away, if you want to make it even more delicious you can serve it with some coconut yogurt, fresh berries or banana ice cream.
Start by pre-heating the oven to 180 degrees celsius.
Place the oats in a bowl and cover them with boiling water, leave them to soak for about 10 minutes. In the meantime chop the banana into slices.
Once all the water has been absorbed add in the banana slices, blueberries, raisins, almond milk, sunflower seeds, black currant powder and vanilla extract.
Then place all the ingredients into your baking dish. I like to decorate the dish with few extra banana slices and blueberries but that’s totally optional.
Bake the oatmeal for 20 minutes until the edges start to turn brown.
Serve while still warm and enjoy!
